Great and easy recipe. I cut the recipe in half, only used the hamburger, cooked it in a 9x13 pan and it was still enough for our family of four. All of the flavor of stuffed peppers with less work.

Loved this dish! My son and husband went back for thirds - it was that good! I hate it when people change the recipe and then rate their new version, but I'm going to do it anyway, because I don't think I really changed the integrity of the recipe - but you decide. I wanted a richer tomato flavor for the topping so I used tomato sauce instead. And I used 3 cups of cooked rice. That was it - just a matter of preference. This one's a keeper, however you make it.

Great kid and picky eater friendly recipe. Easy to make and not easy to mess up. I didn't have Italian sausage, so I used breakfast sausage. This was still very yummy. Also, I would highly suggest cutting in half or at least down by a third. I served this to 4 girls ages 10 to 16 and myself and still had leftovers, and I cut the recipe down to half. One change: I would suggest using more rice.

This is one of my favorite recipes! I make it for dinner at home, as well as for family and church pitch-ins! The only part if this recipe that I have changed up is substituting a large jar of my favorite spaghetti sauce for the tomato paste and crushed tomatoes. It saves me time!
11/02/2013
Very forgiving. I messed up and added a whole can of water to the soup topping. No problem. The boys say this is good and please make again. And in case anyone is wondering, I used frozen green pepper (summer garden abundance) and it was good!
09/14/2013
This is my favorite recipe on here, this has a lot of flavor
12/23/2014
used 3 cans tomato sauce--no soup, one can diced tomatoes, chopped red and yellow pepper--no green. Put cheese on last 10 minutes. Didn't get to take any in for my lunch because it was all gone!

Delicious! Tastes exactly like a stuffed pepper. My husband doesn't like stuffed peppers - he says there is way too much pepper. He loved it! The only thing I did was added extra rice (our preference), but it would have been just as great with the recommended amount.
11/22/2014
This was very good. I was surprised at how well it all came together.
09/12/2014
The family loved this! I only changed a few things to meet our liking. I added one fresh jalapeno, chopped, and grated zucchini. I omitted the two cans of tomato soup and can of tomato paste due to the amount of water the zucchini created. It turned out perfect! No "soupiness" to it at all and still left with a satisfying amount of tomato flavor. Thanks for sharing your recipe.
11/13/2014
Flavor is good. But there is way too much meat!!! I would definitley cut the meat back to 1/2 lb. of each the sausage and the beef and add an extra 1/2 C. rice
01/07/2019
Very good, used colby jack, habenaro infused diced tomatoes and an extra cup of rice. Will definitely make again.
09/30/2016
OMG Looks way better than the picture and tastes absolutely fantastic!! I did add 1 packet of dried onion soup. Also, there is only 2 of us, so I divided it in 1/2 and froze 1/2.
11/12/2013
I loved this recipe, family loved the recipe! It made a lot, hubby has been using left overs as a dip with corn chips. I will make this again & again & again. I love stuffed peppers just not the whole big pepper part & this solves that problem deliciously! Thank you for sharing rebeccahayden87!

My husband and I love this recipe, and I make it often. Because it's just the two of us, I cut the recipe in half except for the rice. However, instead of the rice, I stir in 1 package of cooked riced cauliflower. My husband, who doesn't like cooked cauliflower, has never noticed!
08/16/2013
This was a big hit at my house with both my husband and my 1 year-old. They both cleaned their plates and had seconds. My son actually ate three bowls of this the first time I served it. Winner! I liked it, too, although it's definitely more of a mild-tasting crowd pleaser than a unique and unusual taste. It's simpler than stuffing peppers, though, and fulfills the same craving. Although I haven't tried it, I suspect it would freeze well, which is another plus in my book.

Absolutely delicious. Made some minor changes- 1 -14oz petite diced tomatoes and 1-14oz can crushed tomatoes instead of all diced. Used 1 lb beef and 1/2 lb sausage, and increased rice. Was wonderful and enjoyed by whole family. Mine needed bit longer baking at about 40 minutes. Will make again for sure!
10/28/2018
Pretty decent. I will make it again with the following modifications: more diced peppers, less or no canned soup (felt like it added a lot of salt), and more diced tomatoes. I cooked it off for a week's worth of lunches at work. Everyone commented how good it smelled. It is a great basic spin on stuffed peppers that can be adjusted easily for personal taste.
10/22/2016
i made this last night and wow wow wow me and my husband were so pleasanrtly amazed and happy. I will be making this alot more, but i just used 1 pound of hamburger and a little more rice. 2 thumbs up please please try this recipe it is amazing, it is now one of our favorites
02/06/2017
One of my favorites!!!!
11/07/2016
Very good! My husband loved it & so did I. Just one cup of water for the tomato soup is good though. 2 cups as called for on the can is too much.
10/16/2015
Based on other reviews, I cut down on most ingredients - used 1.5 pounds of ground turkey, 2 large peppers, 1/2 an onion, 1 can petite diced tomatoes. Used 1.5 cups of uncooked rice, lots of worcestershire and most of a 19 ounce can of Progresso tomato basil soup (omitted the water). This filled up a 9x13 baking dish, fed a family of 4 and still had leftovers. Husband had 4 helpings! That never happens! Thanks for a great, easy, yummy recipe!
01/14/2020
I made the recipe as stated. Came out good. I will definitely make again
12/22/2018
My husband loved it. He said it's versatile. You can put leftovers on spaghetti. Use it on pizza dough. Add beans and a little heat, and it turns into chili.
08/31/2018
Everyone loved this. I did some substitutions and it was still a big hit
09/24/2019
Excellent!! Sprinkled with bread crumbs before baking. Very good comfort food!
11/17/2019
The only thing I did was to add more green pepper. I actually forgot to add the cheese and it was delicious without it too! I did add cheese on top to the leftovers. Very good as a leftover too!!
08/30/2018
So yummy!! I added shredded cauliflower in place of rice for a 'paleo' version. There was plenty to share with friends and family.
06/09/2014
Used tomato sauce instead of soup! Was great. A keeper in my house!
11/28/2018
My husband and I thought this was really good. This will become one of our regular meals.
11/06/2017
I made this and did not make any changes. We really liked the flavor, but it was even better the next day!
08/26/2016
Pretty good flavor but not really considered easier than stuffed with 16 ingredients. sorry
10/12/2019
My husband loves this recipe. the flavor is great.
05/12/2020
Loved it. I subbed firm tofu for the meat and added 2 eggs. Otherwise followed the recipe. Really great.
04/26/2020
Great recipe and a crowd pleaser! Much easier than stuffed peppers to make. I used V8 on the top instead of tomato soup. Otherwise made the recipe as shown.
06/10/2018
I changed this recipe to....... steamed peppers, mixed meat ,used spaghetti sauce and parm and mozzarella cheese and rice and layered like lasagna. Thanks for the ideal.
10/13/2018
i tried cooking with my own style... mixing some diced potato and carrots... added some sour cream, spices and grated cheese... my husband and our friend told me are so tasty... will do it again soon... thanks for the recipe shared.
05/21/2022
pretty easy, used 1 large can crushed tomatoes instead of the soup, looks good so far
01/25/2021
It was good. I think next time I will use progresso tomato and basil soup, you dont need to add water and I think it will give extra flavor.
01/16/2021
Out of preference, I used red and orange peppers. I only used one can of tomato soup, and next time I'll double the rice. Easy to adjust to your liking. Husband loved it!
03/14/2021
This was a really good casserole. I changed it slightly based on what I had on hand and how I make my stuffed peppers. I used 1 1/2 lb of ground beef and I added 3 stalks of finely diced celery, 2 diced carrots, and only added one can of diced tomatoes. Instead of the soup and tomato paste, I used about ½ of a 24oz jar of jarred Spaghetti sauce. It came out perfect!
06/10/2019
It was awesome - VERY filling! I added a large dash of paprika (my husbands adds a dash to every recipe) and I didn't have condensed tomato soup but I did have Trader Joes Tomato Organic Roasted Red Pepper Soup and gave it a good pour over the top. I also didn't have green peppers - used my red, yellow and orange. I think the green would have been good but ALL green would be really bitter. I liked the mix. Made so much I froze 1/2. and have another meal for a family of four to go. Thanks for sharing!
02/22/2020
Made too much for two or maybe four. Would cut in half next time. I add some celery and a little cabbage
07/24/2014
The flavor was wonderful. I will add another cup to cup and a half of rice next time though to thicken it up a bit.
08/15/2018
Anything that starts with sauteed peppers, onions and garlic draws attention at my house. This was a good tasting variation of a stuffed green pepper. Everyone who tried it agreed. My daughter grabbed a bag of corn chips and used it as a dip. I ate it right off the plate. I doubled the recipe and thought it needed a little more spice so I will tweek it and try it again.
07/06/2015
Awesome just the way it is! I'm generous with the spices. I've also substituted tomato sauce when I didn't have soup. I've also used all hamburger when it was what I had on hand. I've also used more rice as necessary. Hubby likes for me to put his in a green pepper, so I stick a couple in the corner of the pan and fill.
03/26/2019
I really liked the taste but it came out soupy. Won't add the water next time.
10/04/2015
Awesome!
11/02/2020
love the recipe but I added an extra cup of rice and added cheese inside the casserole mixture.
10/05/2020
Easy to make, very good. All of my family told me to put a star beside this recipe!
06/20/2019
I make this all of the time. Great for leftover lunches!
01/09/2018
This was very good made no changes. I made additional rice on side and poured over the rice. My husband is requesting again. It is a favorite!!!!!!
01/09/2020
I used a jar of spaghetti sauce in the mixture and topped it with a can of v8 for convenience. I also used 2 cups of rice. With those changes, this was the best stuffed pepper casserole that I've ever made!
10/21/2017
I made the recipe as stated except I doubled the rice. It made enough to feed my family of 5 including 2 teenage sons with about 1/3 left over. For me it was very (almost too) tomato-y, but my family loved it. My son just walked back to the kitchen for thirds, & my husband said it was so good he could just keep eating it. I may cut the tomatoes by using one can of diced tomatoes & topping with one can of soup next time - just my preference. My husband & kids wouldn't change a thing and definitely want me to make it again! Thank you for sharing.
03/06/2019
I made no changes. I should have cooked it a little longer. Was kind of soupy. Buttt overall it's very good. Took me a lot more time to cook though without any food processor. Also I didn't have a Dutch oven but did have a big deep skillet. When I placed in baking dish I bet it weighed over 5 pounds. It was delicious
06/23/2013
Forgot to add photos. It was good.
05/16/2020
This quite possibly is my favorite dish I have found on AllRecipes. The only tweak, which I think might be a typo in the directions, is that I use 3 cups of cooked rice, which is, in fact, 1 cup of dry rice. This is now a frequent dish in the rotation.
11/02/2021
This was good but mine turned out more like soup. Not sure what I did wrong. Used cooked barley instead of rice because I lake it better. Replaced the hamburger with turkey and added a few jalapeƱos for a spicier flavor. Did not set up in the pan. Next time I'll just leave in the large pot I cooked it in and eat as a thick soup instead of dirtying another pan.
10/19/2020
I made this dish foe my 5 boys. They really liked it! I will definitely make this dish again. I made this recipe almost to the recipe. Here is what was different. I didn't have green peppers so I used 2 large red and yellow peppers. I would add more rice because 1 cup just is t enough. Other that that, it was great.
10/15/2020
Delicious recipe! Dumping all Ingredients in a bowl is easier to fix and eat than stuffing pepper. I substituted sausage with sirloin burger and Italian seasoning. Also replaced the soup, paste and water with 2 - 15oz cans diced tomatoes, and 1 15oz can tomato sauce. Topped with Asiago cheese instead of cheddar.
03/08/2017
My new favorite recipe!!!
04/15/2020
I was looking for a good "unstuffed" bell pepper recipe and this is it! I followed the recipe as written except I took the advice of other reviewers and used 2 cups cooked rice and I'm glade I did. This made A LOT so I had to use my deep lasagna casserole dish to fit it all in. I'll definitely be making this again.
03/20/2020
Made this tonight for dinner along with a salad and garlic bread. I cut the recipe in half for my husband & myself, and still put in a 9 x 13 casserole dish. We had plenty leftover ( 1/2 the 9 x 13 ) I will definitely make again. I followed the recipe but used red, yellow and green pepper as that's what I had here. VERY GOOD!!
05/08/2013
i thought this recipe was very delicious and filling i didnt feel like making the effort to make stuffed peppers today but was craving them so this recipe was awesome thank u for sharing it
07/03/2019
Mouthwaterly delicious!
06/01/2020
I made it exactly as listed and it was a hit. This is more than enough for eight people. This will be part of our regular rotation now. Thanks for the great recipe.
07/17/2014
This was very good. I followed the recipe as written and thought it had good flavor, but am not a real fan of sausage, so I think I will just double the beef next time.
08/22/2021
We used ground turkey for burger. We only used 1 can of tomato soup. It was a little dryer. Now it was really good only 2 of us so we reheated it adding more cheese and it was great again!
09/01/2021
I didn't want to stuff the peppers so I made this casserole - it is the BEST!!! Tons of meat and flavors are divine. This recipe is a keeper - thanks!
10/03/2020
This was so good! We are a family of 8 and 7/8 of us loved it. It makes enough for leftovers too. It is easier than a regular stuffed pepper. We did add more rice but other than that, it's perfect!
